Summer Weekends

The weekend started off on Friday with lots of errands to run and, of course, a stop at Prellwitz Produce for some strawberries (okay, let’s be honest, it was two very full flats). DSC_1306We had a great visit with my sister-in-law, Erin, Friday afternoon before we all headed to Steve’s cousin, Jerrica’s wedding over at Royal Ridges. We stayed much later than anticipated and were pleasantly surprised with the results of the boys actually sleeping until 8 a.m. the next morning!

Saturday ended up being a laid back due to the boys being sleepy all day and napping in the afternoon. While the boys napped in the afternoon, I was a busy lady. I separated and froze one flat of strawberries and then used the other flat to do some canning and desserts. Strawberry Jam, Strawberry Rhubarb Jam, Strawberry Rhubarb lemonade, Strawberry Shortcake, Strawberry Ice Cream Sandwiches, Strawberry Vinegar

DSC_1308and Rhubarb Marmalade were made in about a two hour chunk of time. All my recipes came from Put ‘Em Up,  Canning for a New Generation, and Taste of Home Farm Fresh Favorites (what an awesome find at Half Price Books for $2!). The ice cream sandwiches are a Pinterest find. I can’t give credit where it’s due though (sad) because it’s just linked to an image and directions were on the Pin itself.

Here’s a screenshot of my pin.Basically, combine strawberries and cool whip. Spread over a graham cracker and then top with another and then freeze. I froze mine in a freezer tupperware container and layered them on wax paper. We all really enjoyed these and will for sure make them again.

We ended up skipping another wedding because we knew the boys couldn’t handle a second night. So that left us with needing dinner. I was very into cooking yesterday, so for dinner I ended up making fish tacos with mango salsa, homemade tortilla shells, and homemade guacamole and tortilla chips (from Homemade Snacks and Staples). I LOVE that my boys will devour food like this and comment on how they are lucky enough to have a mom who cooks from scratch and it tastes good (with no prompting so I know they mean it!).

Sunday ended up being a bit busier than we had planned. Breakfast at our favorite cafe, Kristina’s, with Steve’s family before Erin head back to Minnesota, time in the garden, and fishing by the mill pond all in the morning. This afternoon, we relaxed by the pool in the yard and had a great time with a squirt gun fight, water balloon fight and just relaxing. Dinner ended up being pretty amazing, especially since Charlie ate two huge plates of food. Grilled beer can chicken, grilled packet of potatoes/onion/mushrooms, sauteed radishes, broccoli, strawberries and cottage cheese. So delicious and really the boys couldn’t get enough of anything.

This week starts out interesting and busy but tames down in time for us to enjoy a long weekend together with nothing to do. It’s going to be AWESOME.
